Stuffed Pepper Recipes

We know everyone loves a good stuffed pepper, so we wanted to give you some yummy stuffed pepper recipes! What you might not know is that there are a variety of different ways to make stuffed peppers- you can really add just about anything that you want! You can also switch up the types of peppers that you use. Bell peppers are the normal one, but poblano peppers are a delicious alternative! If you want to use cauliflower rice instead of white or brown rice, you can do that as well. 

Classic Stuffed Peppers
What You Need:

-1/2 cup brown or white rice, uncooked
-2 tablespoons olive oil (avocado oil works too!)
-1 onion, chopped
-1 tablespoon tomato paste
-3 garlic gloves, minced
-1 pound ground beef or ground turkey
-1 can diced tomatoes (14.5 oz)
-1 teaspoon dried oregano
-Salt and pepper to taste
-6 peppers (bell or poblano, tops and cores removed)
-1 cup cheese (optional)
-Fresh parsley, to garnish 

How To Make:

  1. Preheat your oven to 400 degrees. While your oven is preheating, start cooking the rice. In a large skillet, heat the oil over medium heat. Add the chopped onion and cook until soft. Next, stir in tomato paste and garlic. Cook for about 1 minute.
  2. Add ground beef/turkey to the large skillet and cook until full done. Drain any fat from the pan. Add cooked rice and diced tomatoes to the large skillet and stir it all together. Season with oregano, salt, and pepper. Let simmer for about 5 minutes.
  3. Spray a baking dish and place peppers into the dish. Spoon in the mixture until all of the peppers are full. If adding cheese, top now and then cover the dish with foil.
  4. Bake for 35 minutes, or until the peppers are tender. Uncover and bake for another 5-10 minutes until the cheese is bubbly.
  5. Remove from over and then garnish with parsley.

Italian Stuffed Peppers

-1/2 cup brown or white rice, uncooked
-1 can diced tomatoes (14.5 oz)
-1 teaspoon Italian seasoning
-1 teaspoon red pepper flakes
-1 pound of ground chicken (Italian sausage is a non-healthy option you can try)
-1 cup of cheese (optional, but delicious)
-Any fresh basil, thyme, or parsley you’d like
-6 peppers halfed (bell or poblano, cores removed)

How To Make:

  1. Preheat your oven to 375 degrees. Start cooking your chicken in a large skillet. Add all spices together to cook with the chicken. Cook until the chicken is fully cooked through and then add in the tomatoes. Let simmer for one minutes, stirring occasionally.
  2. Add your rice into the skillet and stir well. Add half of your cheese if using and stir that in. Proceed to fill each pepper with the mixture and then top with the remainder of cheese.
  3. Bake the peppers for 30-35 minutes until tender and all of the cheesy is melted.
