Sweet Treats
We know that everyone loves to have desserts, especially with Halloween and the other holidays coming up! Unfortunately, sweets do not fit into our diet so we have to put back the ice cream and throw away the cookies. We’ve found you a couple of DC approved sweet treats to enjoy!
Peanut Butter Banana Rolls
2 servings
What You Need:
2 bananas
4 tablespoons peanut butter
2 whole wheat tortillas
Optional: coconut flakes, cinnamon, strawberries
How to Make:
- Lay tortillas out on a cutting board/plate
- Using a knife, spread 2 tablespoons of peanut butter on each of the tortillas
- Place banana towards one end of the tortilla
- Roll the tortilla, begin on the end where the banana is and roll towards the other end of the tortilla
- Cut the roll into 1 inch thick slices and eat or place in a container
- For the optional ingredients, you can either sprinkle them on top of the peanut butter or on top of the rolls.
No-Bake Chocolate Chip Bars
2 Servings
What You Need:
1/2 cup + 2 tablespoons coconut flour, sifted (DC Tip: try with protein powder!)
1/2 cup mashed banana
1/4 cup peanut butter
1/4 cup honey or maple syrup
1/2 teaspoon vanilla
2 tablespoons mini chocolate chips
How to Make:
- Line an 8×4 loaf pan with parchment paper.
- In a large bowl, mash your banana, add peanut butter, honey, and vanilla. Once the mixture is cohesive and creamy, add in the coconut flour (or protein powder) and mix together. Next, add in chocolate chips and combine.
- Spread into a lined pan with your hands, pressing down and spreading evenly, to about 1/2 thick. Refrigerate for 1-2 hours until firm.
- Picking up the parchment paper, remove from pan and cut into individual squares.
- Wrap them individually or place in a container and refrigerate them for up to a week.
